We present to you a dish consisting of pork kebabs and a salad of zucchini, cut into ribbons, with a Mediterranean dressing. A dinner like this won't break your keto diet, and it tastes amazing!

Ingredients for 4 servings of pork keto kebab with salad

Pork kebab

  • 650 g pork tenderloin
  • 4 wooden skewers approx. 25 - 28 cm long
  • 2 teaspoons Italian seasoning
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • 1 teaspoon sea salt
  • ½ teaspoon white pepper

Zucchini salad, cut into ribbons

  • 400 g zucchini
  • 2 tablespoons finely chopped fresh mint
  • 2 tablespoons finely chopped fresh parsley
  • ½ teaspoon garlic, minced
  • juice and zest of 1 lemon
  • 75 ml extra virgin olive oil
  • salt and ground black pepper

Mayonnaise

  • 225 ml (1 glass) mayonnaise
  • 1 teaspoon minced garlic or garlic paste
  • 1 tablespoon hot sauce

Step by step recipe

  1. Cut the pork tenderloin into small pieces. In a small bowl, combine all the marinade ingredients. Place the pork in a zippered bag and add the marinade. Shake the bag so that each piece of meat is completely marinated. Place the meat bag in the refrigerator for at least 30 minutes. Keep in mind that the longer the meat is marinated, the better!
  2. While the pork is marinating, soak the wooden skewers in cold water to prevent them from burning when frying.
  3. Slice the zucchini into thin strips using a vegetable cutter or a very sharp knife. Place the squash ribbons along with the mint and parsley in a medium bowl.
  4. In a small bowl, combine the garlic, lemon zest, lemon juice, and oil. Pour the dressing with the zucchini ribbons. Set the salad aside without stirring.
  5. In a small bowl, stir in mayonnaise, garlic, and hot sauce.
  6. Remove the pork from the refrigerator and divide it into 4 equal portions. Drain the marinade and string the meat over 4 skewers.
  7. You can cook pork skewers in a grill pan or on an outdoor grill. It is necessary to warm them up to medium temperature.
  8. Grill kebabs on skewers for about 4 minutes on each side, or until the core temperature of the meat reaches 62ºC.
  9. Using tongs, lightly stir the zucchini ribbons with the dressing. Season the salad with salt and freshly ground pepper to taste.

Advice!

Pork skewers can also be cooked in the oven at 200 ° C. To do this, place the skewers on a baking sheet or broiler pan and bake them for 15 to 20 minutes. Turn the skewers every 8 minutes to cook the meat evenly or until the temperature inside the meat reaches 74 ° C.

You can use chicken instead of pork for this dish! It perfectly absorbs the aromas of this marinade!
